For Tom Tedesco, Madison Square Garden’s Executive Chef, perfection takes hold in five full-service kitchens, with each serving of seafood paella and empanadas, thousands of sushi slices and jumbo shrimps and a volley of details that never seems to end.
Over the last 17 years, Tedesco has filled a role and created a menu that has become more intricate as The Garden’s food choices have expanded. Overseeing six Sous Chefs and a battalion of 120 cooks, he has brought an unmistakable upscale touch to The Garden’s cuisine.
In the coming months, The Official MSG Blog will look at The Garden’s vast food operation. For starters, we zeroed in on Tedesco as he tended to the gourmet offerings at The Garden’s 96 suites, including 20 at event level, and the Delta Sky360° Club and the Madison Club.
We kept up (barely) with Tedesco as he ran the paces in the hours leading up to a recent Knicks game. He was in his white chef’s jacket, a meat thermometer at the ready, tucked into a shoulder pocket. It was like watching a chess master darting between games. He seemed to be everywhere at once.
